Najma Food Recipe Series

We know how difficult it can be to find time to prepare meals from scratch and more so creating quality, tasty meals that can be enjoyed by  all family members. We’ve created a series of recipes using a selection of Najma food products, a range which is available in all major Supermakets (Tesco, Asda, Sainsbury’s, Morrisons and The Co-operative). The Najma brand offers a diverse range of packaged convenience foods, making meal time that little bit easier.

  1. Chicken Samosa Chaat

Ingredients for samosa filling:

  1. 150g of Najma Chicken Pieces
  2. 1/2 White onion
  3. 1/2 Red onion
  4. 50g Mixed vegetables
  5. 1tsp fresh garlic purée
  6. 1tsp fresh ginger purée
  7. Spices: 1/2 tsp each of turmeric powder, coriander powder, cumin powder and curry powder
  8. 1 Green chilli
  9. 1tb tomato puree
  10. Pinch of cumin seeds
  11. Pinch of Ajwain seeds
  12. Pinch of Nigella seeds
  13. 100g Flour for dough
  14. Olive oil, as required
  15. Natural yoghurt, as required
  16. Tamarind sauce, as required
  17. Salt to taste
  18. Bunch of fresh coriander

Samosa preparation

 Instructions

  1. Fry the onion with the garlic and ginger purée.
  2. Add salt to taste.
  3. Add a pinch of cumin seeds and ajwain seeds and cook for 5mins.
  4. Once the onions have softened, add the spices and a dash of water to loosen the sauce.
  5. Finely chop the green chilli and add to the sauce together with the tomato purée.
  6. Add the mixed vegetables and cook until the vegetables have softened.
  7. Finely chop the Najma chicken pieces and add to the sauce. Cook for approx. 10mins.
  8. Once the chicken and vegetables are cooked, garnish with fresh coriander.
  9. Set aside too cool.

Making the dough and samosa:

  1. Place the plain flour in a bowl and make a well in the centre
  2. Add 2tsp of olive oil, a pinch of salt and a pinch of Nigella seeds.
  3. Add sufficient boiled water until a dough is formed.
  4. Roll the dough into semi-circle shape and place a small portion of the chicken filling in the centre of the semi-circle.
  5. Shape into samosa triangles.
  6. Deep fry until the dough is crispy and golden.

Assembling the samosa chaat:

  1. Place the fried samosa on a plate.
  2. Drizzle natural yoghurt and tamarind sauce over the samosa.
  3. Garnish with fresh coriander and finely chopped red onion.

2. Cheesy Masala Chips Topped with Crispy Turkey Bacon

Ingredients:

  1. 200g Packet fries
  2. 1/2 Red Onion
  3. 1/2 Red or green pepper
  4. 2-3tb Tomato ketchup
  5. 1tsp Tobasco sauce
  6. 3-4 stripes of Najma turkey rashers
  7. Salt to taste
  8. Bunch of coriander
  9. Cheese, as required
  10. Olive oil, as required

Instructions:

  1. Fry the packet fries until crispy and golden.
  2. Whilst the fries are cooking, prepare the masala sauce by thinly slicing the onion and red/green pepper and cook in 2tb of oil for 2-3mins.
  3. Add salt to taste.
  4. Add 2-3tb of tomato ketchup and 1tsp tobacco sauce.
  5. Add the cooked fries and coat the fries in the sauce. Allow to cook for 2mins.
  6. Top with grated cheese.
  7. Cut the turkey rashers into small pieces and in a separate pan fry in 1tb of olive oil until crispy.
  8. Add the turkey pieces to the masala chips.
  9. Garnish with chopped coriander.

3. Mini Chicken and Leek Pies:

Ingredients:

  1. 150g of Najma Chicken Pieces
  2. 1/2 White onion
  3. 1 Whole leek
  4. 1tsp fresh garlic purée
  5. 1tsp fresh ginger purée
  6. Spices: 1/2 tsp each of turmeric powder, coriander powder, cumin powder and curry powder
  7. 1tb tomato puree
  8. Pinch of cumin seeds
  9. Pinch of black sesame seeds
  10. 1 Ready rolled puff pastry sheet
  11. 1 Egg
  12. Olive oil, as required
  13. Salt to taste
  14. Bunch of finely chopped coriander

Instructions

  1. Thinly slice the onion and fry with the garlic and ginger purée .
  2. Add salt to taste
  3. Add a pinch of cumin seeds and cook for 5mins
  4. Once the onions have softened, add the spices and a dash of water to loosen the sauce.
  5. Finely chop the leek and add to the sauce together with the tomato puree.
  6. Cook  until the leek has softened.
  7. Finely chop the Najma Chicken pieces and add to the sauce. Cook for approx. 10mins.
  8. Set aside too cool.
  9. Take out the ready rolled puff pastry from the refrigerator and cut out small, approx. 5inch circles.
  10. Place the filling on top of one of the puff pastry and seal with a second piece of puff pastry sheet.
  11. Beat 1 egg and coat the pastry sheet in egg wash.
  12. Sprinkle black sesame seeds
  13. Bake in the oven until the pastry is golden brown, approx. 20mins.

4. Smoked Turkey and Sweet Potato Fritters

Ingredients:

  1. 100g of Najma smoked turkey cubes
  2. 2 Sweet potatoes
  3. 1 Red onion
  4. Spices: 1 tsp each of turmeric powder, coriander powder, cumin powder and paprika.
  5. 1 Red chilli
  6. 2 Eggs
  7. Bunch of fresh coriander and parsley.
  8. Salt and pepper to taste.
  9. Oil as required.

Instruction:

  1. Grate the sweet potato and red onion and place in a bowl. Be sure to remove the excess water first.
  2. Add the spices, salt and pepper, coriander and parsley and mix.
  3. Fry the smoked turkey cubes until the outer layer is charred.
  4. Add the cooked turkey pieces to the sweet potato mixture.
  5. Mix all of the ingredients.
  6. Add the egg and mix all the ingredients.
  7. Form a patty and fry until the outer skin is crispy and the sweet potato is cooked through, approx. 10mins.
  8. Layer the cooked fritters on a plate.
  9. Poach an egg and place it on top of the fritters.
  10. Sprinkle black pepper on top of the poached egg.
  11. Garnish with fresh coriander, sliced red chilli and lime wedge.

5. Sweet Chilli Prawn and Chorizo

Ingredients:

  1. 1/2 Block Najma chorizo stick
  2. 1/2 Red onion
  3. 1 Spring onion
  4. 2-3 gloves of garlic
  5. Sweet chilli sauce
  6. 4 Large king prawns
  7. Bunch of fresh coriander
  8. Salt to taste
  9. Olive oil as required

Instructions:

  1. Thinly slice the red onion and fry with the chopped garlic.
  2. Add the chopped chorizo pieces and cook for 5mins.
  3. Chop the spring onion and add to the chorizo (note the chorizo has a tough texture).
  4. Add salt to taste.
  5. Add 4-5tb of sweet chilli sauce.
  6. Shimmer on low heat whilst you cook the prawns.
  7. In a separate pan, grill the prawns in 1tb of sweet chilli sauce until the sauce caramelises and the prawns are charred on the outside.
  8. Add the prawns to the chorizo and garnish with fresh coriander.

6. Mini BBQ Chicken Tacos:

Ingredients:

  1. 200g Najma BBQ Chicken pieces
  2.  1 Red onion
  3. 3 Gloves of garlic
  4. 1/2 Red pepper
  5. BBQ Sauce
  6. Salt and Pepper to taste
  7. Olive oil as required
  8. 2 Tortilla sheets
  9. 1/2 Lime wedge

Instructions:

  1. Cook the onion and chopped garlic in 2tb of olive oil for 2mins.
  2. Thinly slice the pepper and add to the onions. Cook for 5mins.
  3. Add salt and pepper to taste.
  4. Add the Najma BBQ Chicken pieces and cook for 2-3mins.
  5. Add 4-5tb of BBQ sauce as required.
  6. Cut your soft taco sheet into approx. 4inch circles.
  7. Add the BBQ filling to the taco sheet and squeeze the lime juice over the tacos.

7. Chicken Tikka Roulade

Ingredients:

  1. 1 Chicken breast
  2. Salt and pepper to taste
  3. 1/2 tsp tandoori powder
  4. 3 Najma Turkey Rashers
  5. Panko bread crumbs, as required
  6. 1 Egg
  7. Flour, as required
  8. 1 Red pepper
  9. 2 Garlic gloves
  10. Vegetable stock
  11. 1/2 tsp curry powder
  12. 1/4 Onion
  13. Bunch of coriander
  14. 1/2 Mint sauce
  15. 1/2 Mustard sauce
  16. Virgin olive oil as required
  17. Bunch of spinach
  18. 1tsp Butter

Instructions:

  1. Carefully butterfly the chicken breast and then cover with cling film.
  2. Using a rolling pin or meat masher, flatten the chicken until it is approx. 1/4 inch thickness.
  3. Season the chicken all over with salt, pepper and tandoori powder.
  4. Add the Najma Turkey Rashers to one end of the chicken and roll tightly.
  5. Cover in foil and set aside in the fridge to set for approx. 2-3hrs.
  6. Remove from the fridge and coat the chicken roulade in flour, followed by egg wash and finally coat in panko breadcrumbs. Repeat to create a double panko breadcrumb layer.
  7. Deep fry for approx. 5 mins until the outer breadcrumb layer is crispy.
  8. Place in a pre-heated oven for approx. 20mins.
  9. To make the curried red pepper purée, cube the onion and fry in 1-2tb of olive oil for approx. 2 mins. Add the chopped garlic gloves and cook for approx. 2 mins.
  10. Chop the red pepper and add to the sautéed onions and garlic.
  11. Add 100ml of vegetable stock.
  12. Add salt, pepper and curry powder.
  13. Shimmer until the peppers have softened.
  14. Blitz to form a purée. Add more vegetable stock if required.
  15. Transfer the red pepper purée into a pan and shimmer on a low heat until the sauce thickens.
  16. To make the mint and coriander dressing, finely chop the coriander and add the mint sauce, mustard sauce and 4tb of virgin olive oil and mix all of the ingredients.
  17. Blitz to a smooth consistency.

Take you chicken roulade and slice into 1cm thickness. Serve with wilted spinach, red pepper sauce and coriander dressing.

Here is an alternative version using the poaching method instead of frying and baking. In addition, only salt and pepper is used for seasoning the chicken with no breadcrumb layer.
